This New Forest Heather Honey is arguably, the best tasting and most premium of all honeys in the UK. OK, I'm slightly biased, but it's delicious and it has just won first prize at the New Forest Beekeepers' honey show.
Heather honey is made from the nectar of the ling heather plant (calluna vulgaris) which grows in abundance in the New Forest. The bees are fortunate to have lots of ling heather to forage on within a short flying distance. They can reach Rockford Common, Highwood, Linford and the Shobley areas of the New Forest.
This gorgeous honey is thixotropic (meaning it's a gel like), is a beautiful golden colour and has a taste that reminds you of "a late summer's evening in the beautiful New Forest."
The New Forest Heather Honey produced this year was harvested in mid September from ling heather flowering from the latter half of August to mid September.
Because the New Forest Heather Honey is thixotropic the honey is pressed from the combs rather than extracted. It comes in 227 g (1/2 lb) jars.
